Beekeepers in northern, western and eastern Uganda produce honeys with distinctly different botanical footprints. Our work quantifies just how different — and what it means for value.
Analytical fingerprint
Across 46 samples we mapped total phenolics, DPPH radical scavenging and antimicrobial activity against three foodborne pathogens.
The case for origin
Northern acacia honey showed antioxidant activity three times that of some regional peers. Origin labelling — protected today for coffee and cocoa — would allow Ugandan honey producers to capture that premium.
