Indigenous leafy vegetables: nutrient density and dietary role

The overlooked nutritional powerhouses of Ugandan gardens, quantified across seasons and preparation methods.

Nakati, dodo, malakwang and bugga rarely appear in national dietary guidelines. Yet gram for gram they outperform many imported vegetables on iron, folate and vitamin A.

Seasonal analysis

We profiled twelve indigenous leafy vegetables across two wet and two dry seasons, capturing how micronutrient density shifts with rainfall and harvesting practice.

Preparation matters

Traditional short-boil-and-mash preparations retained 40% more folate than the extended-cook methods used in institutional kitchens — a simple, transferable finding for school and hospital feeding.
